Black and Blue Caesar Salad

O'Charley's Copycat Recipe

Serves 2

3 1/2 cups romaine lettuce, chopped
1/4 cup Caesar dressing
1/4 cup Parmesan cheese, shredded and divided
1 1/4 cups large croutons, divided
3 Roma tomatoes, sliced
2 tablespoons margarine, melted
1  (6 oz.) sirloin steak
1 to 2 tablespoons Cajun seasoning
1/4 cup blue cheese, crumbled
1/4 cup bacon, diced and cooked

Start with the romaine in a large bowl. Add the dressing, half of the Parmesan and half of the croutons; toss well. Sprinkle the remaining Parmesan over the top, add the tomato and refrigerate. Place a cast iron skillet over high heat. Brush one side of the steak with melted margarine and sprinkle with Cajun seasoning.

Note: You are going to get a lot of smoke with this next step. If you do not have an exhaust fan over the stove be sure a window or outside door in the kitchen is open.

Place seasoned side down in skillet and while the first side is cooking brush the second side with melted margarine; sprinkle with remaining Cajun seasoning. Cook the steak for about 2 or 3 minutes per side or to desired temperature. Remove the steak from the pan and let it rest for a few minutes while the juices inside regenerate. Cut the steak, across the grain, into 1/2 inch slices  Take the salad out of the refrigerator and spread the sirloin over the top. Add the blue cheese, bacon and remaining croutons; serve.
