California Chicken Sandwich

B.J.'s Brewhouse and Restaurant

2 slices sourdough bread
1 clove garlic sliced in half
1-2 tablespoon butter softened
1/2 teaspoon grated parmesan cheese
1 grilled chicken breast
3-4 slices avocado
1 whole green chili, canned
1 slice pepper jack cheese
1 tablespoon chipotle mayonnaise
1 tablespoon ranch dressing

Chipotle Mayonnaise:
1/4 cup mayonnaise
1/4 teaspoon ground chipotle chile pepper
1/8 teaspoon paprika

Chipotle Mayonnaise:  Combine the ingredients in a small bowl. Cover and chill until ready to use.

Grill chicken breast over preheat barbecue about 5-7 minutes per side, until chicken is done. Rub cut side of garlic clove over both pieces of bread on the side of bread you will be grilling. Spread butter over both pieces of bread on the side you rubbed the garlic over. Lightly press a very small amount parmesan cheese into the butter. On the unbuttered side of one piece of bread spread chipotle mayonnaise. Using desired amount.

 Add the grilled chicken breast, followed by the green chili, the avocado slices and finally the cheese slice. Take the second piece of bread and spread desired amount of ranch dressing on the unbuttered side and place on top of sandwich.  Place sandwich, butter side down on a griddle or skillet that has been preheated to medium-high heat. Grill sandwich until golden brown about 2-3 minutes. Flip sandwich and grill the other side until golden brown, 1-2 minutes.
