Chicken Spinach Burger

This is an unusual item on the menu at Rock Bottom Brewery.  The gourmet poultry burger blends ground chicken, spinach, bacon and bold andouille sausage. It is grilled to perfection and topped with Swiss cheese and a homemade avocado mayo.    

Rock Bottom Brewery Copycat Recipe

Makes 8 Burgers

3 lbs ground chicken
1 lb baby spinach leaves
handful bacon bits
1/4 teaspoon garlic powder
1/4 cup Progresso Italian-style fine bread crumbs

Add the ground chicken, spinach, bacon bits, garlic powder and bread crumbs into a bowl. Mix well and form into burgers. Grill until done and melt Swiss cheese on top.

Note:  This recipe omits the sausage but you can add any kind of sausage you like that has been removed from the casings.  If you want to use real bacon make sure it is cooked before you add it to the chicken mixture.
