Blackened NY Strip



BLACKENED NY STRIP
Rock Bottom Brewery Recipe

STEAK
NY strip steaks
olive oil, as needed
blackening seasoning

JACK DANIELS GORGONZOLA SAUCE
2 ounces Jack Daniels whiskey
2 ounces water
1 quart heavy cream
2 tablespoons thyme
9 ounces gorgonzola cheese
salt, to taste
freshly ground black pepper, to taste

SOUR CREAM MASHED POTATOES
5 pounds Yukon Gold potatoes
4 ounces butter
4 ounces sour cream
8 ounces white cheddar cheese
4 ounces heavy cream
salt, to taste
freshly ground black pepper, to taste

Preparation of the Steak: Heat a skillet to medium-high heat. Rub steak with olive oil and sprinkle with 2 tablespoons of Blackened Spice. Sear steak for 2 minutes on each side. Finish in oven to your degree of doneness.

Preparation of the Gorgonzola Sauce: Reduce Jack Daniels and water by half. Add cream and keep reducing it until it coats the back of a spoon. Next add the gorgonzola cheese and let it melt into the sauce. Season with salt, pepper, and thyme.

Preparation for the Sour Cream Mashed Potatoes: Boil potatoes in water until fork tender. Drain Well. In a metal bowl hand mash the potatoes with the sour cream, cold butter, cheese, and cream. Season with salt and pepper.
