Guinness Beef Stew

5 lb. beef stew meat
1 carrot
1 sm. onion
1 stalk leek
2 stalks celery
2 medium potatoes
1 cup flour
1/4 cup tomato paste
2 quarts beef stock
1 cup red wine
1/2 cup Guinness beer
2 teaspoons salt
1 teaspoon pepper

Saute beef and vegetables. Return meat to vegetables after sauteing, add flour, tomato paste, mix together and cook for 2 minutes, add wine, beer and mix well, add beef stock and let this all come to a simmer, then reduce heat and cook until carrots are tender, about 1 hr. While this is cooking, cook potatoes off separately. When potatoes are finished season with salt and pepper.
