Bacon Wrapped Scallops

Bacon wrapped Scallops with Braised Beet Greens, Toasted Pumpkin 
Seeds and Maple Pumpkin Coulis

Village Tavern Recipe

Serves 4

Main Dish:
12 large sea scallops wrapped in 12 pieces applewood smoked bacon and secured with
2 cups beet greens (a little olive oil, salt and pepper).
2 tablespoons toasted pumpkin seeds

For Sauce:
1/2 cup pureed pumpkin
1/2 cup maple syrup
1/4 cup sour cream
salt, pepper, cayenne and nutmeg, to taste

To make the sauce: Combine all the ingredients in a blender.

Bake the wrapped scallops in 450 oven until the bacon is crisp about 12 to 15 minutes. Quickly braise beet greens in hot pan with olive oil, salt and pepper about 1 minute Put dollop of sauce on plate, top with scallops, and garnish with beet greens and pumpkin seeds.
