Village Tavern Restaurant Recipe
4 cups black beans, with liquid
3 tablespoons canola oil
2 cups yellow onions, diced 1/4 inch
1/3 cup garlic, minced
1/3 cup vegetable base
2 tablespoons cumin
1/2 cup molasses
1 1/2 tablespoons chipotle puree
1/2 cup A-1 Sauce
1/4 cup liquid smoke
1 cup semi sweet chocolate chips
Drain 2 cups of beans in a strainer. Retain 2 cups of beans with liquid. In sauce pot, saute onions and garlic in oil until translucent. Do not allow to color. Add base, cumin, molasses, and chipotle puree. Whisk to combine. Cook for 5 minutes. Add beans. Bring to a boil, reduce heat, and simmer until liquid has thickened. Approximately 30 minutes. Do not overcook the beans. Add steak sauce, liquid smoke and chocolate. Stir until chocolate is melted. Place in a serving bowl, serve hot.
Notes: Chipotle puree can be purchased in the Mexican foods section of the supermarket. If puree is not available, you can use the thick sauce in the canned chipotle chilis. Liquid smoke can be purchased in the barbecue sauce section. The chipotle puree, which is made of smoked jalapeños, will add a layer of smoke flavor to the beans. If you prefer a less smoky dish, you can reduce or omit the liquid smoke.
