Fish and Shrimp Pasta

Boston Beanery Recipe

Serves 4

1/2 pound shrimp
1/2 pound white fish
1 large onion, chopped
1 garlic clove, chipped
1 1/2 tablespoons vegetable oil
1/2 tablespoon olive oil
1 tablespoon butter
4 large tomatoes, chopped
2 tablespoons tomato purée
1 teaspoon oregano
1 bay leaf
freshly ground pepper
1/2 - 3/4 cup dry vermouth
grated cheese
1 pound thin pasta

Shell and clean the shrimp and cut the fish into small pieces.  Cook the onion and garlic in the oils and butter for about 5 minutes.  Add the chopped tomatoes and the tomato paste, the oregano, bay leaf, a light sprinkling of salt and pepper, and the vermouth.  Simmer the mixture, covered for about 30 minutes, adding a little wine and water as necessary to keep the sauce fluent.  Add the shrimp and fish, cover, and cook about 5 minutes.  Cook thin pasta of choice until done al dente, drain, and combine it with the sauce.   Sprinkle with grated cheese and serve.
