Hash Browns au Gratin



HASH BROWNS au GRATIN
Boston Beanery Recipe

1  (2 lb.) package frozen hash browns, partially defrosted
1 1/2 teaspoons salt
dash pepper
1/4 cup coarsely chopped green pepper
1 (2 oz.) jar pimento slices, drained and chopped
2 cups milk
3/4 cup fine dry enriched bread crumbs
1/3 cup soft butter
2/3 cup shredded pasteurized process sharp American cheese

Turn potatoes into a buttered shallow 2 quart baking dish, separating into pieces.  Sprinkle with salt and pepper.  Add green pepper and pimentos; mix lightly.  Pour milk over potatoes.  Cover with aluminum foil.

Cook in a  350 degree oven 1 1/4 hours, or until potatoes are fork-tender.  Remove foil; stir potatoes gently.  Mix bread crumbs, butter and cheese.  Spoon over top of potatoes.  Return to oven and heat 15 minutes, or until cheese is melted.
