Irish Beer Cheese



IRISH BEER CHEESE
McGuire's Irish Pub Recipe

Makes about 2 cups

8 ounces cream cheese
4 ounces blue cheese, such as Stilton or Cashel blue
1/2 stick unsalted butter, softened
1 tablespoon (or more) Irish ale
1 tablespoon honey
1/2 teaspoon cracked black pepper
pinch cayenne pepper
1/2 cup chopped walnuts

In a food processor, combine the cream cheese, blue cheese and butter. Pulse until blended and smooth. Add the ale, honey and both peppers, and pulse to blend. Add more ale if mixture is too thick to spread easily. Fold in the walnuts. Pack the mixture into a crock, cover and refrigerate until ready to serve with crackers.
