Canadian Bacon and Potato Casserole



CANADIAN BACON and POTATO CASSEROLE
Boston Beanery Restaurant Recipe

6 medium potatoes, peeled
salt
1 tablespoon vegetable oil
1 medium onion, chopped
1/2 medium sweet red pepper, chopped
1 cup diced Canadian Bacon
3 tablespoons butter
1/4 cup hot milk
2 eggs, beaten
2/3 cup grated cheddar cheese
freshly ground pepper

Cook the potatoes in salted water. Heat the oil in a skillet and saute the onion for 2 minutes, then add the red pepper and bacon and saute another minute. Drain the potatoes when tender and put through a potato ricer or mash them, then beat in the butter, hot mild, eggs and cheese. Add the sauteed onion and pepper and Canadian bacon, and mix well. Season with salt as needed and freshly ground pepper. Turn into a greased casserole and bake in a preheated 350 degree oven for about 30 minutes, until lightly browned on top. Serves 4-6.
