BJ's Brewhouse Cajun Shrimp Pasta



CAJUN SHRIMP PASTA
BJ's Brewhouse Restaurant Copycat Recipe

1 ounce butter
2 ounces chopped red onions  
2 ounces chopped roasted red peppers
1 teaspoon blackening spice
2 ounces tomato juice
3 ounces Alfredo sauce
3 ounces Marinara sauce
12 ounces cooked fettuccine noodles
5 1/2 ounces (31/40 count) shrimp, peeled & deveined (cooked in blackening seasoning)
1 tablespoon green onions, chopped
2 teaspoons Parmesan cheese

In a saute pan, heat the butter to a sizzle, add the onions and peppers and saute 30 to 40 seconds, add the blackening spice and tomato juice. Add Alfredo sauce and Marinara and bring to a simmer, add the fettuccine noodles  and toss well . Place noodles and sauce into serving bowl, mounding as high as possible. Place hot cooked shrimp on top of pasta, Top with green onions and Parmesan cheese. Serve immediately.
