Fado's Irish Pub Gaelic Steak Boxty

Fado's Irish Pub Recipe

Serves 4

Boxty Mix:
12 ounces Idaho potatoes, peeled and shredded
2 eggs
14 ounces milk
2 tablespoons softened butter
1/3 cup water
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1 tablespoon seasoning salt
pinch white pepper
1 teaspoon salt
10 ounces flour
2 tablespoons chopped parsley

1 tablespoon olive oil
filet tips, chopped - 4 ounces for each serving
2 ounces yellow onion, julienne cut
2 ounces mushrooms, sliced
2 tablespoons Marinated Tomato
2 tablespoons brandy
2 ounces Peppercorn Sauce
2 teaspoons chopped parsley
1 Boxty Pancake
1 1/2 ounces Peppercorn Sauce  (on top)

Marinated Tomatoes:
4 teaspoons chopped parsley
2 teaspoons sugar
1 teaspoon garlic powder
1 teaspoon seasoning salt
pinch black pepper
pinch thyme leaves
6 tablespoons olive oil
1/4 cup red wine vinegar
1 tablespoon green onion
1 quart grape tomatoes, cut in halves

Combine all ingredients in a mixing bowl. Add the tomato halves and toss to coat.

Peppercorn Sauce:

Part 1
2 ounces brandy
pinch fresh chopped thyme
pinch chopped garlic
2 teaspoons green peppercorns in brine
pinch ground black pepper

Part 2
4 ounces demi glace
1 ounce beef stock
2 1/2 ounces heavy cream

Place all the ingredients from part 1 in a sauce pot, heat the liquid until the flame burns out. Add the ingredients from part 2, using a whisk to blend the sauce. Bring the sauce back up to temperature, reduce the heat and simmer for 10 minutes.

1 tablespoon green onions, sliced on a bias
2 teaspoons diced tomatoes

Make the boxty- a traditional Irish potato pancake. Add the garlic powder, onion powder, seasoned salt, white pepper, salt and flour. Mix well. Now add the wet ingredients: melted unsalted butter, eggs, milk and water. Mix well until you get the consistency of a pancake. Add the shredded potatoes and parsley and blend again. Put non-stick spray in a pan. Get it hot and add a scoop of the boxty mix to make pancakes. Cook 2 to 3 minutes on each side until a light golden brown. When they're done, set aside.

For the steak. Add the vegetable oil to a hot pan and throw in filet tips. Season with salt and pepper, and then add onions and mushrooms. Saute for a minute and half. Add the brandy, and peppercorn sauce. (Recipe above) Add the marinated tomatoes. (Recipe above)

To Plate: Put the boxty down flat on a plate then pour the filet tips on top. Roll it up like a burrito. Then garnish with more peppercorn sauce, diced tomatoes and green onion.
